Abstract:

In this chapter, we discuss saffron production from the economic perspective. Saffron statistics show that world price of saffron, amount of product and its cultivated area are growing since 2010. This is due to the increase in the world’s saffron demand. We present results of studies conducted on economic efficiency in Iran indicating determinants of economic performance for saffron farms. The comparative advantage of saffron is analyzed using the policy analysis matrix (PAM). The results show that saffron production is profitable at both market and social prices. From the economic point of view, saffron production has some advantages including requiring small size of land (it can be even cultivated in spaces among trees), providing work opportunities especially for women, and requiring non-advanced equipment and less financial investments.
