چکیده
Crystallization occupies a key place in sugar production. It is ultimately the decisive process stage for numerous parameters of sugar quality and to large extent determines the sugar yield. In spite of their prominence in research and development over many years, important crystallization problems are not yet satisfactorily resolved and require further work. This article gives an insight into selected crystallization-related investigation conducted at the Berlin Sugar Institute in the years 1995 to 2005.
