Abstract
In this study we report, isolation of active peptides produced from hydrolysis of qualie hen egg white protein using trypsin orpapain and purification of these peptides using HPLC and ultrafiltration. in addition, the kinetic parameters including Km, Vmax and IC 50 of the bioactive peptide against angiotensin converting enzyme( ACE) were described.
