Abstract
A modified three step hysteresis loop test with different holding time (1, 3, 5, 10, and 20 min) was assessed to evaluate the extent and rate of time dependency of basil seed gum (BSG) system at different temperatures (10, 30, 50, 70, and 90 °C). The highest extent of time dependency (e.g., 1.93 at 50 °C) and the lowest rate of time dependency (e.g., 0.36 s at 50 °C) was observed at the lowest shear rate of 0.01s-1-1 for all the studied temperatures. Among the Herschel-Bulkley model parameters, the highest rate of time-dependency at all temperatures was observed for consistency coefficient parameter.
