Evaluation of shelf life of apples (Gala variety) was studied by non-destructive acoustic at 2 ° C and 85% relative humidity during 10 weeks. Acousti parameters including natural frequency, firmness index, and elasticity coefficient were obtained by recording the acoustic signals from a non-destructive impact of a pendulum impactor by the microphone of the Hand-Held Analyzer and then converting it from time domain to frequency domain. The tests mentioned were performed weekly. Data were analyzed using Duncan test at the 5% level of significance. The results showed that the acoustic parameters decreased during the storage period. According to statistical analysis, time independent variable was significant for all dependent variables.
