Nisin is a five-ring cationic polypeptide containing 34 amino acids and a molecular weight of 3.5 kDa. It is the only bacteriocin licensed for use as a food additive and is currently licensed in more than 50 countries and has made a significant impact in the food industry as a natural preservative for a variety of foods. 11 other natural variants have also been identified. In this study, the characteristics of molecular weight, total charge, theoretical isoelectric pH, aliphatic index and total hydropathic average of all nisin variants were predicted with the help of ProtParam tool.
