Abstract
Whole grains,asfoodsourcesofbioactivephytochemicals,havesigni4cantantioxidantactivity.1equalityandnutritionaland health bene4cialpropertiesofwholewheatcultivarsdependmainlyongenotypeandclimateconditionswherethegrainis produced. 1erefore,threewheatcultivars:twodry-farmingcultivars(OuhadiandAzar2)intheQuchanarea(toevaluatethe genetic e;ect)andoneirrigatedcultivar(Pishgam)grownindi;erentclimateconditions(todeterminetheclimatee;ect)were chosen tocompare(i)phenoliccontent,tocopherolcontent,andantioxidantactivity;(ii)fattyacidcomposition,saponins,and phytic acid;and(iii)antiproliferativee;ectoncoloncancer.Grainsproducedunderhigherwaterstressshowedhigherphenolic and tocopherolcontentsandgreaterantioxidantactivity.PishgamcultivatedinNeyshabur(3.09,1.93mg/g,and37.63 g/g phenolic, Cavonoid,andtocopherolcontent)with28.36%andOuhadi(3.18,2.26mg/g,and44.6 g/g phenolic,Cavonoid,and tocopherol content)with20.09%hadthemostantioxidantactivitiescomparedtotheothers.However,therainfallregimes through thegrowingseasonhadagreatimpactontheinvestigatedparameters.1evariationsintechnologicalandnutritional traits amongthecultivarsareexaminedwithrespecttotheimpactofgeneticandenvironmentalinCuences.1eresultspropose that whole-grainwheatproductsmayplayavitalroleinpreservingahighlevelofantioxidantsinthebody,potentiallyaidingin the preventionofdiseasesassociatedwithreactiveoxygenspecies(ROS)andproliferativecoloncancer.
