Abstract
The ethanol extract of T, vulgaris leaves (0.1-0.4%) was added to four equal batches of prepared mayonnaise. Reduction of the number of these two microorganisms was observed in all cases but the effect was more pronounced on E. coli and the rate of reduction was a function of the extract concentration. These results suggest the models used were able to show the antimicrobial effect.
