Abstract

The purpose of this study, is investigate the product of edible films made from grass pea protein isolate, and determine the effect of concentration of grass pea protein isolate , plasticizer and oleic acid concentration on the mechanical properties include tensile strength and percentage tensile elongation of edible films. . For this purpose seed of green pea protein isolates ranged from 2 to 10, glycerol in the range of 0.5 to 7 and oleic acid in the range of 0 to 2 percent by weight was evaluated by response surface method. In this research, the mechanical properties test was performed with texture, and by measuring six replicates for each sample. The results showed that tensile strength increased when the grass pea protein isolate increased, and with increasing glycerol and oleic acid, significantly decreased (p<0.01). But these results were contrary to tensile strength.
