Abstract
Gamma-amino butyric acid -GABA-, a non-proteinous compound and four-carbon free amino acid, is synthesized through an irreversible α-decarboxylation reaction by the action of glutamic acid decarboxylase enzyme -GAD- on L-glutamic acid or its salts. It has been found in some bacteria such as Streptococcus, Escherichia, Neurospora, Aspergillus, and Lactic acid bacteria -LAB-, which the highest GABA concentration is produced by the latter. As well, it is found naturally in petunia, tea, tomato, rice, and soybean. GABA is able to treat some disorders and illnesses such as chronic alcohol-related symptoms, autonomic disorders, sleeplessness, and depression, as well as to stimulate immune cells. This mini-review paper highlights the microbial synthesis and different detection methods of the bioactive GABA.
