Abstract

Nisin was incorporated to polyvinyl alcohol-Alyssum homolocarpum seed gum (PVA-AHSG) films. The migration of this substance from the films into a liquid food simulant (50% ethanol in water) was determined experimentally at different temperatures (4, 25, or 40 °C). The results showed that the amount of nisin migration was depending on temperature and time. The obtained data were interpreted using different mathematical models such as Fick\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s second law, a power law and a Weibull distribution function. The diffusion coefficients (DP\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s) of nisin in the films and the partitioning coefficients (KPF\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s) at the polymer-food simulant boundary were determined. The DP\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s increased from 2.04×10–13 to 1.51×10–12 cm2/s when temperature increased from 4 to 40 °C. At the same time the KPF\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s decreased from 10.1 to 0.7 (g/cm³)/(g/cm³). The temperature dependence of the DP\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s and KPF\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\'s could be well correlated with an Arrhenius type equation yielding a diffusion activation energy of 41.19 and −54.5 kJ/mol, respectively. High correlation factors (R2 > 0.92) where obtained by fitting the nisin released data with the Weibull function. The b and n parameters of this function increased from 7×10−9 to 10−2 and respectively from 0.12 to 0.63 when the temperature increased from 4 to 40 °C. All results from this study showed that migration of nisin from PVA-AHSG films into the food simulant used was accelerated with temperature. The ability of nisin to release appropriately from the films into the food simulant makes the obtained active films favorable for food packaging applications, especially dairy products.
