Abstract

Diterpenes are the main components of the unsaponifiable fraction in coffee oil which mainly exist (98 %) as esterified with different fatty acids especially acid palmitic. Analysis with the aid of HPLC-DAD resulted in co-elution of some of these compounds so in the present study new approach based on spectral deconvolution was developed for separation and quantification of the main diterpene esters in coffee brews.
